I do wish that you had used multiple cuts of meat. It is not always so easy to see. I watch a lot of cooking competition shows, and I have seen multiple highly skilled,professional chefs cut with the grain, by accident.

I often cut with the grain to portion, so that when plated, people can cut against the grain.

i slice with the grain, no gods, no masters
