I totally agree with Lawman Johnson on bolognese sauce as lazy/comfort food. I make a huge batch (as much as can fit in my largest enameled cast iron pot), and sure it takes a few hours of prep/initial cooking, but then it's just simmering for 5+ hours and you're done. It freezes really well and then you can heat it up relatively quickly when you want something tasty and satisfying. I have a few containers in my freezer right now 🙂
