Despite its popularity, SISIG is a relatively recent dish. The Filipina who created it did not gain any financial benefits from her recipe. Her family continues to operate a rundown eatery near the railway in Pampanga. She openly and foolishly shared the ingredients and preparation on a television interview during the 1980s when the dish was becoming recognized. She could have capitalized on its success, but the entrepreneurial mindset wasn't there. The same can be said of Crispy Pata. Yet, a Filipino Chinese can build a major conglomerate from a cheap hamburger. Really sad.

sisig with egg or mayonaise is just like dog food. Real sisig must never be pretentious like those with raw eggs.
