I did not have a few of your ingredients so I put some together of what I did have, started with S&P, did the mustard rub an all i had was panko bread crumbs ( thanks for that tip to keep the juices in the pork!)A mix of spices that I had that smelled good together. For the gravy applejuice for the wine, dijon mustard as you did and S&P and blasmic vinegar and a drizzle of a balsamic glaze on the pork before bacon wrapped and after cooked. Calling it Spiced Pork with Apple Balsmic Gravy. Will have to let you know how it tastes once it is done.
