Great stuff. Here's a hint, we use veal from shoulder or neck. In Bosnia they may combine beef and lamb (80/20) ratio. We would mince the meat marinate it with salt, pepper, garlic powder and a splash of bone broth. Knead it for half hour or so. Leave it in the fridge for 24hrs then add onion to the patty just before barbecuing or pan frying. The cream you are making is called kajmak. That is not how it's made. Great video though.
