Would love to see your interpretation on lamb with cumin. The most popular across China and the middle east (and now popular in Australia too) is lamb skewers (normally small cubes of lamb shoulder with the odd cube or two of lamb fat) with a cumin/chili rub. I've tried similar with lamb loin chops that have come out really well. Been thinking about possibly trying lamb shanks on a smoker or direct heat grill however I'm without a bbq at the moment.
