Beef & Chicken Empanadas

Ingredients

For the dough:
300g / 2 1/2 cups all purpose flour
1/2 tsp salt
115g / 1/2 cup unsalted butter
80 ml / 1/3 cup water

Beef filling:
340g / 3/4 pound ground beef
1 medium carrot, grated
1 celery rib, minced
1 medium sweet potato, peeled and dices in 1cm cubes
2 garlic cloves, minced
1/2 tsp ground cinnamon
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp pepper

Chicken filling:
240g / 1/2 pound chicken breast, diced in 2cm cubes
1 small onion, minced
1 red chili (if you like it spicy keep the seeds in), minced
1 garlic clove, minced
1 tbsp tomato puree
1 tsp ground cumin
1 tsp smoked paprika powder (la Chinata)
8 pitted green olives
1/2 tsp salt
1/2 tsp pepper

Method:
1. Put the flour on a large plate and add the salt, butter, egg and water.
2. Mix everyting well and knead for a couple of minutes.
3. Place the dough in plastic wrap and refrigerate for 1 to 2 hours.
3. Preheat the oven to 190°C / 375°F.
4. Meanwhile place the potato in a pan of salted water. And cook it for about 5 minutes. Drain and set aside.
5. Cook the minced meat until brown in a pan with 1 tbsp olive oil.
6. Add the carrot, onion and celery and cook for 5 minutes more.
7. Then add the potato, garlic and all the spices and cook for another 2 minutes. Set aside.
8. For the other filling cook the chicken lightly brown with the onion, garlic and chili for around 4-5 mintues.
9. Add the tomato puree and cook it for 1 minute.
10. Then you add the olives and all the spices and cook for another 2 minutes. Set aside.
11. Divide the dough into 8-10 balls. Sprinkle your work surface with some flour and roll out the balls of dough very thin into a round of about 10-15 cm.
12. Put 2 tbsp filling on the dough and brush some beaten egg on the edge of the dough.
13. Fold one half of the dough over the filling to the other half of the dough. press well onto the egg-brushed dough and press it with a fork.
14. Place all empanadas on an oven tray and brush the tops with beaten egg. Place the oven tray in the oven for about 35 minutes until everything is golden brown.
Really nice with some dips like Chimichurri or Chipotle mayo.
