Your first recipe is the one I’ve been using – I love it, except that they don’t puff up very much, almost like not enough batter for two. These make a GREAT sandwich. I never got an eggy taste, but it depends on the brand of Mayo. Original recipe called for Dukes Mayo specifically, which is the only Mayo I use anyway. And you can use almond flour or coconut flour. With coconut flour, you add a tablespoon of water instead of a teaspoon.

Love this demo. I dislike the chaffle with cheese as they are so salty. This gives a lot of options. Yum!
