To make the BEST PHILLY STEAKS you do need to brown the meat, but most steaks sandwich shops in Philly steam their steak, so most of the time the best are made at home.

I made this tonight and it was delicious. The only problem was that the sauce was very runny and the mayo broke. Not sure why this happened. How do you prevent the sauce from breaking?
