"excess fat" is subjective haha. I don't touch it. I just chop mine into pieces that fit into a sous vide bag and then sous vide it for 2 days at 145 degrees. Put a reverse sear on it after and it's perfect every time. Nice and simple and 95% hands off. Plus it allows me to save 100% of the collagen that I can use for broth or whatever I want.

'Twas a nice presentation, but I think that it is really sad that poor ol' Pork the Pig, gave his life to be smothered under a mound of SPUDS and BUTTER! 😥
Perhaps, he should have been dressed up in spices to be wrapped in tortillas, pulled pork sandwiches or at least a green chile stew!
