Really good technique. I came to the same main conclusions from all the YouTube videos I've watched. I agree with not doing the excess salt, pre-scoring down the lines you are going to cut and also making use of the broiler. It's the best way at home. I think there is still some benefit of pre-boiling, especially the skin layer for 5 minutes as it tenderises the skin and allows it to rise more overall.
