The smell would drive us all crazy. Her technique was a little different than yours. She used real garlic and herbs but she pushed them into the holes quite a bit, so I guess they were protected from burning. She also did not wrap it as far as I can remember. Instead she periodically basted it with orange juice. The skin on that pork was absolute heaven.
