if i've got like a whole block of short ribs do i need to cut em into pieces like so first? or will the same thing work with a single chunk and i can cut em after?

Amazing how what used to be a lesser cuts of beef have gotten so expensive. I love short ribs but they cost too much. Hell, you can get steak cheaper than these.
