Garnishing with parmesan is for the rich fancy Italians from the North. Southern Italians garnish with ricotta salata. Not ricotta, but ricotta salata.

For anyone curious about his cook book and on the fence of wanting it or not. I purchased one for my wife and myself since he gives a really decent amount of recipes on YouTube. I will say his cookbook is definitely worth the buy. There is a nice variety of foods to choose from. My wife made his apple butter. My God, does it spread nicely on bread.
