I haven&#039;t made it for years, though I always loved it; but love the idea of the stone fruit, prunes, and beans here with pork (pork goes so well with stone fruits -- pork chops with cherries or with peaches, in season, are in regular rotation, and of course apples are a classic combo). And, yes, I thought the appellation cassoulet was a stretch, but looked it up: any meat and bean casserole is actually a cassoulet (does not need to take 2 days to make, or require confit duck).]]></description>
