Suggest you add cream cheese to the mixture to add some body the the sandwich. Chop up the roast beef and add something like roughly chopped tinned pear. You could also use such as chopped parsley and chopped sweet pepper for a bit of colour. Finally, get yourself an electric knife and use a ruler or something similar to guide it so that the sandwiches are the same length and width.
