I never thought I would see the day ATK didn't know how to use a mixer. You move the bowl to where the beaters are near the edge and rotate the bowl on its lazy Susan. This allows you to scrape the sides of the bowl with a rubber spatula.

I've recently bought a kitchenaid professional and I've read the manual which states that it shouldn't be used more than 10 minute to knead a dough, it is not enough to make many dough recipe to be smooth and elastic, I've seen many cheaper Chinese home machines to run more than 17 minutes to knead a dough… am I missing something ? please advise

Your mixer you said to move the trash back and forth was incorrect. For the smaller bowl you leave the lever to the left. For the larger bowl, the lever goes to the right.

I have that mini stand mixer that's pictured on the right but in pink and it works really well. I bought that after my KitchenAid classic mixer unexpectedly stopped working after two and a half years. Plus, I live in a basement suite so it's a perfect size for that space and easy to move around unlike the very heavy one. I actually like the move the bowl lever because it is actually a huge help to get everything mixed in well.
