Im spoiled because I get to spend half the year in Taiwan each year. This isn't even close to all the different kinds of tofu there are. It's an incredibly versatile protein, but the options in the US are extremely limited to basically what was shown in this video, outside of what some Asian markets might have. Try freezing firm tofu cubes, then use in hotpot, it will puff up and absorb the soup broth!
