My change is that I put maybe half the lemongrass in the food processor (sliced). One other suggestion—once the water-based liquid is starting to evaporate a great deal, instead of the absolutely constant attention it takes to stir and not burn—I throw my pan into the oven, and finish it there. It browns off without burning, though I still come and stir often.
