Eid Special Beef Nihari Written Recipe With Directions
Ingredients:
-Clarified Butter (ghee) 150g
-Beef or mutton fat (charbi) 50-60 g
-Onion (piyaz) medium size 1 julienne
-Beef nehari cut 1200 g
-Ginger garlic (adrak lehsan) paste 2 tbs
-Red chili (lal mirch) powder 2 tbs
-Salt (namak) 1 tbs
-Water (pani) ½ cup
-Ginger (Adrak) powder 1 tbs
-Fennel seeds (sonf) powder ½ tbs
-Cumin seeds (zeera) powder 1 tbs
-Water (pani) 1 ½ liter
-Flour (atta) 2 tbs
-All-purpose flour (maida)1 tbs
-Gram flour (besan) 1 tbs
-Yellow food color ¼ tsp
-Water (pani) ½ liter
-Long pepper (Pipli) 3
-Cumin seeds (zeera) 1 tsp
-Black cardamom (badi elaichi) 1
-Star anise (badiyan k phool) 3
-Mace flower (javatri ka phool) 1
-Green cardamom (sabaz elaichi) 5
-Cloves (laung) 5-7
Directions:
-In a wok, add clarified butter and fat and heat it.
-Add onion and cook it until light brown in color.
-Then, add beef and fry it for 3-4 mins until it changes colors.
-Add ginger garlic paste, red chili powder, salt, and water. Cook well for 5-6 mins.
-Separate the Rogan (taree) with the help of a strainer. Set aside for later use.
-In a bowl, add ginger powder, fennel seeds powder, and cumin seeds powder. Mix well. Nehari masala is ready!
-Add nahari masala and water. Mix, cover, and cook it for 1-1.5 hours until it is tender (25 mins in pressure cooker).
-In a pan, add flour, all-purpose flour, and gram flour. Roast it.
-Bring it out to a bowl, add yellow food color, and water. Mix well with the help of a hand beater.
-Gradually add this prepared mixture to nehari and continuously stir the spoon.
-Cook it for 10-15 mins on medium flame.
-Add ½ liter water, cover, and cook it on low (Dum) flame.
-In another pan, add long pepper, cumin seeds, black cardamom, star anise, mace flower, green cardamom, and cloves. Dry roast it. In a grinder, add spices and make a powder.
-Add the prepared spices powder to nehari and stir the spoon. (you can also add water to spices powder and mix well so that there will be no lumps in nehari).
-Add salt if required. Mix well and cook it for 2-3 mins.
-Separate the beef from nehari and shred it well.
-Add shredded beef to the hot plate then add nehari and rogan (taree).
-Garnish it with ginger, green chilies, fresh coriander, and lemon.
-Serve with nan and Enjoy!
