Best recipe I have tried, I only add on 2 steps which I stole from other chefs, score (cut with razor abt 1cm) the meat part a bit so the dry rub gets a lil deeper and cover the skin part with more salt which I removed before the brushing the vinegar, this gives a bit more kick (not over salty at all). But method wise the best I have seen and tried so far. Thank you.
