Did she just use a fat separator to strain the ice water? I'm using that tip in the future.
My only complaint is, if someone who allegedly knows how to cook hears of healthy ingredients, and their first thought to themselves is, "it won't taste good," they aren't as good of a cook as they imagine themselves to be. People who think this way might want to check out YouTube chef, "Avant Guard Vegan," among many others in my subscription list and saved recipes. Ffs, healthy eating isn't all wheat grass juice smoothies and granola. If you can have decadent and healthy, why wouldn't you? Decadent and unhealthy end up killing us, slowly, painfully, and early. I'd say you could ask my dad and my first husband, but they both died of dietary related issues, at 57 and 56, respectively, the latter literally dropping dead at my feet of his final heart attack. I say, "final," because he'd had so many smaller ones, with angioplasties, more stents than anyone else in his cardiologist's practice and a quadruple bypass, I literally lost count. And he still kept eating garbage, because, "I've *got* to have my meat." I remarried, to a man ten years younger than myself, who is on that same path. While I've lived with undetectable HIV for about half my life, and artificial hips for 19 years, I am in perfect health, because I know how to cook both delicious *and* nutritious. So, stop reinforcing the stupid idea many/most people have, that healthy isn't going to taste good. Please and thank you.

Good recipe, but that is some stone hard unripe plum (or a variety I'm not aware of)

Could always flip the sheet pan and sit the dough on top so when you cut it with the pizza wheel you don't have to worry about the lip. I could see the dough flying off if you're not too careful though.
