If I go to a Chinese restaurant I have never been to before, I always order the Mongolian beef as a "test".

I have never seen a chef fail like this ::

overwhelming amount of oil …

his Mongolian beef lacks the rich, dark color of that signature dish … the meat is beige !

This is not true Mongolian beef.

This is not Mongolian beef that reminds you of rich-looking "pepper steak" w / all of its spectacular colors.

This chef knows better ! He prefers his Mongolian beef beige, color-less, not-so spectacular, easy-on-the-eyes, almost life-less …
