You really do need just a cube of the taro. The taro I found were very small and barely had any purple strains throughout. While they turned a little purple after cooking it didn't really color the drink. I might try 2 cubes next time and maybe just a little juice from some blueberries. But as is, the recipe is quite delicious. I LOVE a blended taro drink, so finding a method that's just as indulgent but much healthier and fresher tasting makes me so happy! Thank you!
