The cooking temperature kills everything that would be bacteria that you could wash off, so it’s a waste of time and water. No professional chefs wash their pork butts. Number two, that gravy has a lot of fat floating on top of it. If you remove the roast and put the gravy in a gravy separator. You can pour off all the fat in two minutes.
