DO NOT refrigerate your filling before you place it between the cookies. It gets too hard and when you put the two sides together it will crack your cookies and they will start to fall apart. Instead, make the filling and scoop some directly onto the cookies and put them together. I have no idea why they thought it should be chilled first because as you can see in the video, they do this and it cracks the cookies right on camera.
