The best thing you can down on a Weber if you start to see temperatures go up is to just choke down the vents for a while and wait for the temperature to drop. Then open the vents back up again to stabilize at the temperature you&#039;re aiming for.]]></description>

A properly vented &#039;snake&#034; will easily give 12+ hours of smoking time. Use hickory, apple, cherry or mesquite chunks, depending on what we&#039;re going for. Just bought a fancy two-probe electronic thermometer (Father&#039;s Day gift to myself) with remote receiver... will be interesting to see what temps I have been getting.]]></description>
