I let it rise to the top of my loaf pan before baking, so I can’t use plastic wrap, but I can use an upside down plastic container or an elastic bowl cover when proofing.

We usually freeze ours in 3 slice sandwich bags, all the bags in a gallon size bag.

I am quite interested to see how it handles after being frozen. I baked a delicious loaf by a different cook and I thought I had finally found the perfect gf bread. However, after being frozen, once toasted it fell apart almost like a sandcastle—-we couldn’t retrieve it out of the toaster without it falling completely apart. So disappointing. So please let us know how this bread holds up after being frozen. Thanks!

Will be trying this one and so hope to find a simple one for light fluffy rolls with ingredients i can get in Spain ❤ thank you for your hard work snd great channel ..🎉
