The curry is warm from a special blend of spices used for the curry power goes really well with the earthy ( Geosmin?lol) flavor of the beets, finished off with a touch of coconut milk in the end to bring a little creamy sweet taste really brings out the sweetness of the beets.. my mouth is watering as i write this. When i make a pot of beet curry, with the cooked greens on the side with some warm rice, i'm in heaven! Hope you give it a try, happy to share the recipe, perfect for the fall!
