I might be in the minority but to me the best way to eat a sweet potato is the simplest…. slow roasted with butter, salt and lemon pepper

I was never a fan of sweet potato casserole… My family had rounds of boiled sweet potatoes with cinnamon, brown sugar, and marshmallows on top. I'll try this one with eggs! My family's is probably one of the meh flavorless versions you came across in research.

I don't go for marshmallows, but candied nuts are a great addition to sweet potato. If you want to take this in yet another direction, add curry leaves along with the bay.

Love sweet potatoes but not a big fan of casserole. Eric may have convinced me to try this. I do love toasted marshmallows and pecans so it looks like a win all around.

Can someone clarify, is this a dessert dish or a dish that goes with the savoury meal? I’m Welsh and have no idea 😂 (it looks really interesting either way, I’d love to try it!)
