Thank you for this recipe, it was great! My mother doesn't get enough protein and won't eat what I usually cook but she loves this. She also loved your easy chicken casserole.

Pretty sure I'm making this lunches next week! Looks amazing and really not that complicated to make at all! 'd make it in my Dutch oven though and just cook everything together

I broke my 40 hour fast this afternoon with this meal! My daughter is gone on a camping trip so I took the opportunity to make something mushroom heavy as she can’t stand them. Absolutely delicious and very fast and easy. Instead of parsley I used cilantro. I also sliced up an avocado to go on top and scooped up each delicious bite with pork rinds. Those additions helped me get enough calories on OMAD. Happy to have leftovers all to myself!
