I was using the same ingredients for a mayo and when I realised I just emulsified them, then added the dry ingredients, the result was a more moist and bouncy cake.

The first time I ever heard of that I thought someone had done lost their mind.
But I made one for someone's birthday at their request, and when I tasted it (reluctantly), I was pleasantly surprised… It was good!

My mother always made a chocolate mayonnaise cake. I would eat it over any other cake. I still make it today.

My Mother used Mayonnaise in her mashed potatoes. Salt, pepper and butter. They are delicious!
