I sautéed shiitake mushrooms with chopped garlic and the tomatoes first and added fresh basil mixed in with the arrugala (or rocket) at the end. Fantastic!

I would definitely make that pasta dish! Simple, clean nutritious meals are right up my alley! And the fact that the recipe comes together so easily & quickly is an added bonus on a busy weekday. I would also sauté the garlic first for about a minute to give it a nice caramelized flavor.
