Had a la carnicería( Mexican meat market) that had some great store made. Much less fat than normal 50% crap most places push. They sold out and new owners brought back the old grease bucket stuff.

Couldn't find Maggi seasoning so I substituted Worcestershire, Soy, white vinegar, and lime juice. As usual, Malcolm's glaze recipe makes double what is needed.

Love it, the chorizo has the flavor that meatloaf has always been missing. No queso needed. (edit: i wouldn't use mexican chorizo from a tube…that stuff is all fat. Look for mexican chorizo in the flat package like Malcolm has in the video.)
