What I always do is instead of just mashing the bananas, I warm them in a microwave until the juices come out, then I strain that juice and reduce it until the banana flavor becomes really concentrated, then add it back to the bananas. If I really want to up the flavor or I’m working with bananas that are not as ripe as I’d like, I might even add a little banana extract.
