And each one has been a TREMENDOUS SUCCESS!!! I've NEVER had any luck with bread making (which IS shameful, for someone who comes from a very long line of professional bakers and flour confectioners!!!!)

It's sent me way down the rabbit hole of hydration. I've been making bread for over 60 years and never given hydration a thought, my standard mix when the family was at home was 3lb flour 30oz water. This appears to give a 70% hydration, ie sticky, now I have to work out why it was not sticky!! Back to it, with smaller mixes, thanks so much.
