I set it at 60°C for 6hrs for medium rare. It cooks to temperature rather than time but cooks slowly so it's tender. It's always really juicy which seems weird if it's on dehydrate but it works! I sear it before but I've seen people put it on airfry for 10 mins after it's cooked. I put it on the rack with some stock below for juices to drip into to make gravy. I've done it with beef lamb and gammon but wasn't a success with chicken for some reason.
