Never seems worth the miniscule space savings to have them lock in a closed position. Any thoughts on this? Maybe home cooks feel differently. But I do see these in professional kitchens all the time.

Also what about tongs for delicate pans and pots, like, nonstick and dutch oven pots? Can't use bare steel for those. They'll scratch.
