					<description><![CDATA[Hello there from Central Mexico!! I am a Chef specializing in Classical Mexican Cuisine but I do cook everything else, love Thai and all Asian dishes! Wanted to write to tell you about my &#034;cheat&#034; for Lasagna in case you don&#039;t find Ricotta, which used to happen a long time ago, so I use plain old Cottage Cheese, add 2-3 eggs, salt &#038; pepper any additional spices you like and some melting cheese on top, now I don&#039;t beat it so much since it won&#039;t matter so just bring it all together and use as a regular Bechamel layer in the dish. This will firm up with the baking and you&#039;ll get a nice even creamy layer to your lasagna, of course, Parmesan Cheese and do your layers as regular... hope you try it.]]></description>
