Hello there from Central Mexico!! I am a Chef specializing in Classical Mexican Cuisine but I do cook everything else, love Thai and all Asian dishes! Wanted to write to tell you about my "cheat" for Lasagna in case you don't find Ricotta, which used to happen a long time ago, so I use plain old Cottage Cheese, add 2-3 eggs, salt & pepper any additional spices you like and some melting cheese on top, now I don't beat it so much since it won't matter so just bring it all together and use as a regular Bechamel layer in the dish. This will firm up with the baking and you'll get a nice even creamy layer to your lasagna, of course, Parmesan Cheese and do your layers as regular… hope you try it.

I've been doing something rather interesting lately. I've been making oat porridge and making it asian, with sesame oil, soy sauce, chilli, coriander, sping onion and eggs! It's really good and wonderful for your insides!

I was on a bus trip around Australia one time, and I put my hand up to help the cook. She made bolognese one night, and put NO MEAT in it! It was completely eggplant instead. I was shocked – but we were the only ones who knew, and you couldn’t tell there was no meat.
