I used 2 boneless chops but I think mine were thicker because they were not that tender. I would also use less honey.

I wonder if it will rival "Mom's Chops" with baked potatoes. I remember the chops cooking (simmering?) for quite a while in a big Iron skillet with a wonderful flour gravy. Mom's chops are among my fav childhood memories – I just now recalled sopping up left over gravy with bread .

I have yet to duplicate "Mom's Pork Chop Dinners" – maybe your recipe will do the job.
