I just tried this last night and it was a hit. My boyfriend and his parents are Ecuadorian.. I totally surprised them with how good it was. They said it’s better than the Cuban restaurant they go to to get this meal. That’s a huge compliment. Thank you so much for this recipe. I wanted to learn how to make Spanish food for him. I’ll be making this from now on.
