It's interesting you mention the brine, my haitian friend makes alot of fish and salmon like this and he says that he washes his fish in hot water, lime juice, sea salt, and vinegar. He says it helps get rid of the albumin too, he says its traditional for haitians to do that cause it helps there be no albumin and kill bacteria. Very nice dish though! Very good amount of magnesium yum yum! You should do cuban fried fish next!
