All the tips Lidia gives are spot on:
Always generously salt your pasta water.
Never put oil in pasta water.
Never rinse it.
Always cook it al dente. Always add your grated cheese off the heat.

Shells are perfect here because they hold the sauce well. If you can’t find shells penne would work too.
Also I cook the zucchini on a med high heat. This ensures caramelization without the zucchini turning to mush. I also use Cento San Marzano whole plum tomatoes. They have the perfect balance of sweet and acid. I love the use of scallions here over onions. The fresh taste and slight crunch they give are wonderful here.
Always grate your own cheese if you can. Grana Padano cheese is delicioso!
