Don't forget to also reach on the inside of the thigh and bend against the grain to break the thigh bone out of the socket to break the blood vessel in it.

I think there's also a little joint on the thigh you can pop and it makes the thigh more even shaped, idk I just remember being told to pop the thighs when I'd fry chicken
