That looks fabulous!! I’ve cooked many pork butts (shoulders) but I’ve never tried to roast one like this. I wish I had one right now…

I always use McIntosh apples for my sauce. With brown sugar, lemon juice and Cinnamon. No butter.

Question – I would have expected that roasting pat would have been filled fat after roasting the shoulder – but it doesn't look like that was the case?

In the USA, we’d probably use a Granny Smith apple. It’s quite tart.
