Speaking from experience, never add flour to a pasta sauce. Pasta already has starch on its texture to thicken the sauce. Adding flour will make it an explosion of carb which is not good for a pasta dish. Sauce has to be watery so the sauce can cook the pasta. Baked mac and cheese or not but never add flour to any pasta sauce if you don’t want a strong taste.
