Why not fill it with booze? You probably want to bring som anyway and then it wont freeze and will fitt perfectly in your box.

Put the ice pack on top. Cold air flows downwards over your food and it will actually stay cold.

I've used these wine bladders for cold packs. Another use: wash the insides with clean water and fill, getting the last air bubble out through the spigot; now you have clean water stored for emergencies. And they don't leak. Leave them on the garage floor.
