I have been doing that since the 70's. I even make aluminum pouches and put chicken in with potatoes and onions or just any vegetables and then seal it up by folding the end. It steams the food inside and everything comes out very tender and moist. You know the food is done with the pouch gets very tight like a balloon, but I usually let it cook for about 15 minutes past that the balloon phase. Cut the top open and sever up the chicken/steak and then use the juices in the bottom as your gravy.
