As a Taiwanese I don’t think it’s correct at all…… actually this should be one pot dish and easy to make. You are making it to complicated also the final doesn’t look good…

A few questions: is it wrong to include the soaking water in the simmer? Is it wrong to cut the mushrooms? Seems like the sliced mushroom soaked all the flavors and it got more flavorful than the sauce 🤣.
