I'm in Montevideo, Uruguay right now, mid August 2022. I purchased a loaf of this type of bread about a week ago at Confiteria La Corunesa. The only difference was it was twisted & baked as a loaf, rather than folded & baked in a pan. It must be a specialty item only available in limited quantities or on certain days because when I was back a few days later they didn't have any on the shelf. I didn't ask. Also, pretty much ALL the bakeries I've seen have little tiny 'croissant' looking rolls (about 3" long) made of the same layered bread. IMHO, the bread & pastry here in Montevideo is equal or better than the goods I saw in Bordeaux France this April......Oh, I didn't finish the video. There are the croissants now!
Unless I'm mistaken, this is basically Brioche dough that's made by adding the butter in a sort of puff pastry manner. (Actually, I'm not being as thorough as I should here. I haven't compared the exact recipes for both doughs. But I am sure the stuff in this video from Uruguay is a bread, NOT a puff pastry. Exact taste difference doesn't really matter as long as you follow the recipes to get the one you want.) Not as difficult or precise as puff pastry, but it makes wonderful bread.
